Sake is, at its simplest, a concoction of rice, water, and mold. Because of this, the type of rice used, the purity of the water, and other basic quality standards make a huge difference in the type of sake created. The rice is often polished down, removing the surface imperfections. This polishing also removes fatty acids - some companies claim the more fatty acids removed, the less of a hangover the drinker gets

(Listed Driest to Sweetest) Made from fermented apple juice, cider comes in a number of varieties. English cider is dry, with fruity, tannic qualities and low carbonation. This can be found cask-conditioned in England. What's the deal with cider? A staple in Britain before the Norman invasion, hard cider is now consumed across the globe (though the British continue to consume nearly half of all cider produced worldwide). Cider's popularity in the United States waned after the 19th century introduction of German lagers, and declined further after Prohibition, but recently cider is making a comeback stateside. From festivals such as Pour the Cour and New York Cider Week, to the growth of domestic brands like Boston Beer Company's popular Angry Orchard, the US cider market is predicted to grow 65 percent between 2011 and 2016. The resurgence of cider prompts many to compare the beverage's composition and potential health benefits to those of beer — especially as it's increasingly popular as a gluten-free option for beer lovers who, well, can't drink beer. But in terms of health benefits (and flavor) each drink is unique and can vary greatly from bottle to bottle. Hard cider and beer differ dramatically in their composition. Hard cider is made from a combination of yeast and apples. Since most beers are free of fruit juice, their nutritional value looks different from that of cider. Beer is composed of yeast, hops, barley, and other grains that yield a variety of different antioxidants and nutrients

German pilsners typically come in two varieties, the northern and the southern. Southern examples are akin to a Bohemian pilsner with German hops and less malt. Northern examples are very well-attenuated (leaner in body) and dry

The color of pale lager ranges from light bronze to nearly transparent and the alcohol anywhere from 4-6%. Adjunct usage may be quite high, though in some cases the beer is all-malt. One thing that doesn't vary is that neither the malt nor the hops make much of an impression on the palate. These beers are brewed for minimum character, though faint traces of hop or malt may show through. More likely though is that adjuncts like corn will show through, or you'll find notes of higher alcohols (fuel notes) due to the use of high-gravity brewing. The body will be thin and watery, and the finish is typically non-existent

A beer that straddles between the mainstream Pale Lager and Pilsner. Not all beers that call themselves Premium Lager are, but those that are will typically have a deep gold to light bronze colour, and distinct influence of malt and hops. Overall accent will be malty-to-balanced, alcohol in a slightly tighter range than either Pale Lager or Pilsner (4.5-5.5%). Most often the product of a microbrewery or brewpub, but macrobreweries can make this style if they jack up the hops a bit and make it all-malt

Very wheaty, very sour style of Berlin. Berliner weissebier has a barely perceptible hop content, low alcohol, and a sharp character. Often these are laced with syrups to cut the intense acidity, but purists will want to take them neat to enjoy the multi-faceted complexity and thirst-quenching character

Belgian style wheat beers are very pale, opaque, with the crisp character of wheat, plus the citric refreshment of orange peel and coriander. Ingredients sometimes also include oats for smoothness, and other spices such as grains of paradise. Serve with light cheeses or mussels

Depending on the style can range from pale and light body to dark brown with full body. Wheat beer is characterized by it's cloudy appearance and it's banana and sometimes vanilla aftertaste

A dark take on the German wheat theme, dunkelweizen have the same banana and clove notes of their pale cousins, but also have earthy, toasty, chocolatey notes from the addition of dark malts. They are "shoulder season" wheat beers to many drinkers - something a little more robust than a hefeweizen for the fall and spring seasons, but not as rich as winter's weizenbocks. Alcohol is between 4.8-5.6% generally, bitterness is low, and carbonation is high

A helles lager brewed to bock strength, therefore still as strong as traditional bock, but lighter in color and with more hop presence

Doppel means double and while these are stronger brews than the traditional German bocks, they are typically not twice the strength. Color is light amber to dark brown. Very full body with a high alcoholic flavor. Low hop flavor and aroma

A stronger version of Doppelbock. Deep copper to black. Very alcoholic. Typically brewed by freezing a doppelbock and removing resulting ice to increase alcohol content

These are anything but traditional. A catch-all category that we use to classify all of those ancient or resurrected styles of antiquity that are appearing more and more in brewing today. From sahti to heather ale to sorghum beer to gruit, and beers like Adam and Midas Touch, these ales will vary tremendously in character from one another. Many are unhopped, strength can vary, but all are a glimpse into brewing past

Sour Ales have a strong fruit flavor similar to the aroma, but more intense. Plum, prune, raisin and black cherry are the most common flavors, followed by orange and some spiciness. Sour Ales have an obvious sour or acidic taste, but this characteristic can range from moderate to strong. There is no hop bitterness, but tannins are common. Subsequently, Sour Ales are often described as the most "wine-like" of all beers. Sours are an acquired taste

Lambics are wheat beers made with stale hops and fermented with wild yeasts and other microorganisms, traditionally only on the Senne Valley in and around Brussels. The most traditional of the fruit lambics are kriek (cherry) and framboise (raspberry). In modern times, peaches (peche), blackcurrants (cassis), grapes, as well as more exotic fruits are used. Traditional lambics are commonly denoted by the term "oud", which is a reference to "old-style", and these are the most sour. More commonly, though, lambics are sweetened to cut the intense acidity. Serve with sharp cheeses or pickled dishes, or use in the preparation of mussels

A style without definition, amber ales range from bland, vaguely caramel-like beers to products with a fairly healthy malt and hop balance. Often the differentiation between a quality amber and an American Pale is that the amber might have more dark malt character, or a less assertive hop rate

Classic English Pale Ales are not pale but rather are golden to copper colored and display English variety hop character. Distinguishing characteristics are dryness and defined hop taste, but more malt balance than what you'll typically find in an American Pale Ale. Great to drink with all sorts of meats including roast beef, lamb, burgers, duck, goose, etc. Note that the term 'pale ale' is used in England to signify a bottled bitter, and in that way there is no such thing as 'English Pale Ale' to the English. The style is a North American construct, borne of the multitude of pale ales that pay homage to these bottled bitters - Bass in particular - and therefore the majority of true examples of the style are found outside Britain

American Pale Ales are light in color, ranging from golden to a light copper color. The style of this beer is defined by the American hops used. American hops typically have high bitterness and aroma. This is a perfect beer for big fare like grilled burgers or combination pizzas, as well as lighter fare like sushi and green salads

Not a style per se, but the only logical category to incorporate the plethora of strong, stylistically vague beers coming from American micros these days. Some are related to English Strong Ales but with more hop, while others are ultra-strong variants on the IPA or red ale themes. But no matter how varied their origins or characters might be, all are intense, potent, with generous quantities of hops and malt

This style, the modern version of which has largely been formed in the US, has an intense hop flavor which was used to preserve the beer for the long voyage. India Pale Ale has a golden to copper color with a medium maltiness and body. The aroma is moderate to very strong. IPAs work especially well at cutting the heat of chili, vindaloo or Sichuan cuisine. In England, IPA is often just another name for bitter although some micros are doing their own versions of an American IPA as well

Imperial IPA, Double IPA or DIPA is a strong, often sweet, intensely hoppy version of the traditional India Pale Ale. Bitterness units range upward of 100 IBUs and alcohol begins at 7.5% but is more commonly in the 8.5-10% range. The flavor profile is intense all-round. Unlike barley wines, the balance is heavily towards the hops, with crystal and other malts providing support

A Trappist Beer is a beer brewed by or under control of Trappist monks. Of the world's 171 Trappist monasteries (as of April 2005), seven produce beer (six in Belgium and one in The Netherlands). These seven breweries are authorized to label their beers with the Authentic Trappist Product logo that indicates a compliance to various rules edicted by the International Trappist Association

These are dark, malty, yeasty strong ales in the Trappist tradition, but produced (mainly) by secular brewers. Dubbels range between 6.5-8% abv, and have a dark brown, cloudy colour, and a palate mixing malt, a lush fruitiness, and yeast. They are typically bottle-conditioned

Like other abbey ales, Tripels are strong, yeasty-malty beers. But they are also pale, and have a notable hop profile. Hop bitterness may be higher than a typical abbey ale, up to 45IBUs. But the finish is where the hops really shine, as tripels should finish fairly dry. Otherwise, maltiness is still essential to the style, and the assertive yeast note typical of all abbey ales will be more apparent in tripels, since they do not have the rich dark malts to distract the palate. Alcohol flavours feature more prominently in Tripels that in just about any other style

Quadrupel, is the name given to ultra-strong Trappist and abbey ales. The name Abt was pioneered to describe Westvleteren and the beer that would become St. Bernardus. Quadrupel was pioneered by La Trappe. Abts are the darker of the two, with more rich, deep fruity notes. Quads are paler, with corresponding peachy notes. Neither have much in the way of hop, and both are very strong and malty. Though both are bottle-conditioned, abts trend more towards yeastiness. Alcohol is very high (10+% abv) for both

Belgian-style ales seldom fit neatly into classic beer styles, but this category represents those "session" ales (in Belgium this means under 7% abv!) that do not fit other categories. Colour ranges from golden to deep amber, with the occasional example coming in darker. Body tends to be light to medium, with a wide range of hop & malt levels. Yeastiness & acidity may also be present

Belgian Strong Ales can vary from pale to dark brown in color, darker ales may be colored with dark candy sugar. Hop flavor can range from low to high, while hop aroma is low. The beers are medium to full-bodied and have a high alcoholic character. Types of beers included here include tripels, dubbels and ultra-strong abbey ales

Medium bodied with hints of caramel or toffee. Cellared smell and flavor are characteristics. Color can vary from full gold to copper colored. Good head retention. The name means "beer for keeping" and is best when aged

Fruity esters dominate the aroma. Clarity is good w/ a large foamy head. The addition of several spices and herbs create a complex fruity or citrusy flavor. Light to medium bodied w/ very high carbonation. Alcohol medium to high

Scottish ales are generally dark, malty, full-bodied brews. Many examples have a hint of smokiness derived from the use of peated malt. 60, 70, and 80 shilling examples are all session ales under 5% abv, but the stronger "wee heavies" can range closer to 8%, with the accompanying increase in alcohol flavour and esters. Works well as an accompaniment to hearty meat and game dishes, sharp cheddar, atholl brose and shortbread

A Barley Wine is a strong, top-fermenting ale, with an alcohol contents of at least 9% and up to 13% (or more) by volume. Hops may be hardly noticeable at all or very noticeable. Sip them out of the special glass, that will concentrate the aroma. They are excellent with cigars or with dessert

There are three or four beer styles called Old Ale. The first is the best known - the strong dark Old Peculier style. The second type of Old Ale is a blended dark ale. At least one of the beers comprising the blend will be aged for a couple of years in wood casks. The third version of Old Ale is a form of mild – a low-gravity dark ale. Another version of Old Ale is closely related to the first

Black or chocolate malt gives the porter it's dark brown color. Porters are well hopped and heavily malted. This is a medium-bodied beer. Porters can be sweet. Hoppiness can range from bitter to mild. Porters are often confused with stouts (and with good reason, but that's for another day)

Dark brown to black in color. Sweet stouts come in two main varieties - milk stout and oatmeal stout. Milk stouts are made with the addition of lactose, and are sweet, low-alcohol brews. Oatmeal lends a smooth fullness of body to stouts. All of the sweet stouts are noted for their restrained roastiness in comparison with other stouts, and low hop levels

Imperial stouts are usually extremely dark brown to black in color with flavors that are intensely malty, deeply roasted and sometimes with accents of dark fruit (raisin, fig) or milk sourness. The bitterness is typically medium and often the low side of that. Imperial stouts are strong and often exceed 8% by volume

Islay is an island off the west coast. Traditional Islay malt whiskies are intensely smoky and pungent in character with a distinctive iodine or medicinal tang that is said to come from sea salt permeating the local peat that is used to dry the barley malt

The Highlands consist of the portion of Scotland north of a line from Dundee on the North Sea coast in the east to Greenock on the Irish Sea in the west, including all of the islands off the mainland except for Islay. Highland malt whiskies cover a broad spectrum of styles. They are generally aromatic, smooth and medium bodied, with palates that range from lushly complex to floral delicacy. The subregions of the Highlands include Speyside; the North, East and West Highlands; the Orkney Isles; and the Western Islands (Arran, Jura, Mull, and Skye)

Campbeltown Single Malts are single malt Scotch whiskies distilled in the burgh of Campbeltown, on the Kintyre peninsula in Scotland. Once a major producer of whisky with as many as 28 distilleries, and claiming the title "whisky capital of the world", production has markedly declined. Most of these distilleries have gone out of business and little trace of them remains in the Campbeltown area

Before the present-day revival in popularity of single malt Scotch whiskies, a number of the 100 or so malt whisky distilleries did not bother to bottle their own product. Almost all of their production would be sold to blenders, directly or through brokers. The one exception to this rule was the relative handful of casks from each season's production that would be sold to independent retail merchants or bottlers who would mature the whisky on their own, then at an age of their own choosing, bottle and sell them to the public. This commercial tradition was more prevalent before the rise of supermarket and discount liquor chains, but a handful of independent bottlers remain in Scotland. The best known of these are Cadenhead, Gordon & McPhail, and The Malt Whiskey Society. These merchants bottling can offer interesting variations on official distillery bottling

Irish whiskey must be distilled and aged in the island of Ireland. The contained spirits must be distilled to an alcohol by volume level of less than 94.8% from a yeast-fermented mash of cereal grains (sacrificed by the diastase of malt contained therein, with or without other natural diastases) in such a way that the distillate has an aroma and flavor derived from the materials used. The product must be aged for at least three years in wooden casks. If the spirits comprise a blend of two or more such distillates, the product is referred to as a "blended" Irish whiskey

Bourbon Whiskey must contain a minimum of 51% corn, be produced in the United States, be distilled at less than 80% ABV (160 proof) and be aged for a minimum of two years in new charred barrels, although in practice virtually all straight whiskies are aged at least four years. Any Bourbon, or any other domestic or imported whiskey, for that matter, that has been aged less than four years must contain an age statement on the label. Small Batch Bourbons are bourbons that bottled from a small group of specially selected barrels that are blended together. It should be noted though that each distiller has their own interpretation of what constitutes a "small batch." Single Barrel Bourbon is Bourbon from one specifically chosen cask. The Taste: Flavor descriptors such as toffee, pralines, vanilla, and dried fruit to describe the initial rush of flavors in good, well-aged Bourbon. The charred oak barrels give Bourbon a distinctive spicy oak firmness that is unique to American whiskeys

Rye Whiskey must contain a minimum of 51% rye grain, be distilled at less than 80% ABV (160 proof) and be aged for a minimum of two years in new charred barrels. A small amount of straight Rye whiskey is bottled and marketed, but most of the industry production is blended into other whiskies to give them additional character and structure. Canadians frequently refer to their whisky as "Rye," though it is in fact made primarily from corn or wheat. The Taste: While the best Bourbon is known for a creamy, caramel-like palate, the best Rye whiskey makes its presence known with a spicy, grainy, hard-edged firmness that is distinctive and unique. Usually very dry, with notes of walnut, toasted grain, and black pepper, straight rye has a bold assertive character that has earned it a small but dedicated following among discerning whiskey fans

Blended American Whiskey is required to contain at least 20% straight whiskey; with the balance being unaged neutral spirit or, in a few cases, high-proof light whiskey. It has a general whiskey flavor profile (most closely resembling Bourbon), but lacks any defining taste characteristic

Canadian whiskies, as with their American cousins, originated on the farm. These early whiskies were made primarily from rye. In time most Canadian distillers turned to corn, wheat, and other grains, but Canadians continue to refer to their whisky as "Rye" even though the mash bill for most Canadian Whisky is now predominantly a mix of corn, wheat, and barley, with only a modest perportion of rye for flavor, which results in a lighter-bodied spirit

Rum, and its fraternal twin, cane spirit, are made by distilling fermented sugar and water. This sugar comes from the sugar cane and is fermented from cane juice, concentrated cane juice, or molasses. Molasses is the sweet, sticky residue that remains after sugar cane juice is boiled and the crystallized sugar is extracted. Most Rum is made from molasses. Molasses is over 50% sugar, but it also contains significant amounts of minerals and other trace elements, which can contribute to the final flavor. Rums made from cane juice, primarily on Haiti and Martinique, have a naturally smooth palate

White Rums are generally light-bodied (although there are a few heavy-bodied White Rums in the French islands). They are usually clear and have a very subtle flavor profile. If they are aged in oak casks to create a smooth palate they are then usually filtered to remove any color. White Rums are primarily used as mixers and blend particularly well with fruit flavors

Golden Rums, also known as Amber Rums, are generally medium-bodied. Most have spent several years aging in oak casks, which give them smooth, mellow palates. Dark Rums are traditionally full-bodied, rich, caramel-dominated Rums. The best are produced mostly from pot stills and frequently aged in oak casks for extended periods. The richest of these Rums are consumed straight up

Spiced Rums can be white, golden, or dark Rums. They are infused with spices or fruit flavors. Rum punches (such as planter_s punch) are blends of Rum and fruit juices that are very popular in the Caribbean

Brazil produces vast quantities of mostly light Rums from column stills with unaged cane spirit called Cachaça (ca·sha·sa) the best-known example

Cognac named after the town of Cognac in France, is the most famous variety of brandy, produced in the wine-growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charente-Maritime. According to French Law, in order to bear the name, Cognac must meet strict legal requirements, ensuring that the 300-year old production process remains unchanged. It must be made from at least 90% Ugni Blanc, Folle Blanche or Colombard grapes, although of these, Ugni Blanc, known locally as Saint-Emilion, is the variety most used today by some way. It must be distilled twice in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais

Germain-Robin, based in Ukiah, California, is one of the highest rated alembic brandy makers in the world. The distillery was founded in 1982 by Ansley J. Coale, a local rancher, and Hubert Germain-Robin, a native of Cognac, France. Coale, a former Princeton professor of ancient history, had bought 2,000 acres (809 ha) of farmland outside of Ukiah, named Eagle Ridge Ranch, in 1973. By chance, one day in 1981 he picked up Germain-Robin, who was hitchhiking throughout California in search of a location to make brandy. Germain-Robin came from a family that had been making cognac under the name Jules Robin & Company, but had recently sold the business to Martell, prompting Germain-Robin to leave. Ronald Reagan was an aficionado of Germain-Robin brandies and reserved a number of barrels for the White House, which he served as a matter of national pride to visiting dignitaries such as Michael Gorbachev and François Mitterrand

Armagnac is a distinctive kind of brandy or eau de vie produced in the Armagnac region in Gascony, southwest France. It is distilled from wine usually made from a blend of grapes including Ugni Blanc, Colombard, and Baco 22A, using column stills rather than the pot stills used in the production of Cognac. The resulting spirit is then aged in oak barrels before release. Production is overseen by INAO and the Bureau National Interprofessionel de l'Armagnac. Armagnac was one of the first areas in France to begin distilling spirits, but the brandies produced have a lower profile than those from Cognac and the overall volume of production is far smaller. In addition they are for the most part made and sold by small producers, whereas in Cognac production is dominated by big-name brands

Calvados is an apple brandy from the French region of lower Normandy. Calvados is distilled from cider made from specially grown and selected apples, from over 200 named varities. Well-made calvados should naturally be reminiscent of apples and pears, balanced with flavors of aging. The less-aged calvados distinguishes itself with its fresh apple and pear aromas. The longer the calvados is aged, the more the taste resembles that of any other aged brandy. As calvados ages, it may become golden or darker brown with orange elements and red mahogany. The nose and palate are delicate with concentration of aged apples and dried apricots balanced with butterscotch, nut, and chocolate aromas

Pisco is a color-less or yellow to amber colored grape brandy produced in winemaking regions of Peru & Chile. Pisco was developed by Spanish settlers in the 16th Century as an alternative to orujo, a pomace brandy that was being imported from Spain

Absinthe is a distilled, highly alcoholic (45%-90% ABV), anise- flavored spirit derived from herbs, including the flowers and leaves of the herb Artemisia absinthium, also called "wormwood." Absinthe is typically of a natural green color but is also produced in both clear and artificially colored styles. It is often called "the Green Fairy." Although it is sometimes mistakenly called a liqueur, absinthe is not bottled with added sugar and is therefore classified as liquor. Absinthe is unusual among spirits in that it is bottled at a proof but is normally diluted with water when it is drunk. Absinthe originated in Switzerland. However, it is better known for its popularity as an alcoholic drink in late 19th- and early 20th-century France, particularly among Parisian artists and writers. Due in part to its association with bohemian culture, absinthe was opposed by social conservatives and prohibitionists. Charles Baudelaire, Paul Verlaine, Arthur Rimbaud, Vincent van Gogh, Oscar Wilde, and Aleister Crowley were all notorious "bad men" of that day who were (or were thought to be) devotees of the Green Fairy. Absinthe was portrayed as a dangerously addictive, psychoactive drug. The chemical thujone, present in small quantities, was blamed for its alleged harmful effects. By 1915 absinthe had been banned in the United States and in most European countries except the United Kingdom, Spain, Portugal, and the Austro-Hungarian Empire. Although absinthe was vilified, no evidence has shown it to be any more dangerous than ordinary liquor. Its psychoactive properties, apart from those of ethanol, have been much exaggerated. A revival of absinthe began in the 1990s, when countries in the European Union began to reauthorize its manufacture and sale. As of February 2008, nearly 200 brands of absinthe were being produced in a dozen countries, most notably France, Switzerland, Spain, and the Czech Republic

Gin and its Lowlands cousin Genever (Jenever in Belgium) are white spirits that are flavored with juniper berries and so-called botanicals (a varied assortment of herbs and spices). The spirit base of Gin is primarily grain (usually wheat or rye), which results in a light-bodied spirit. London Dry Gin is the dominant English style of Gin. As a style it lends itself particularly well to mixing. London Dry Gin is the dominant Gin style in the United Kingdom, former British colonies, the United States, and Spain. Plymouth Gin is relatively full-bodied (when compared to London Dry Gin). It is clear, slightly fruity, and very aromatic. Originally the local Gin style of the English Channel port of Plymouth, modern Plymouth Gin is nowadays made only by one distillery in Plymouth, Coates & Co., which also controls the right to the term Plymouth Gin. Genever is made primarily from "malt wine" (a mixture of malted barley, wheat, corn, and rye), which produces a fuller-bodied spirit similar to raw malt whisky. A small number of genevers in Holland and Belgium are distilled directly from fermented juniper berries, producing a particularly intensely flavored spirit. For a truly exceptional Gin & Tonic, ask for it to be made with Q-Tonic. A natural tonic water made from natural quinine bark and sweetened with organic Agave

Tequila is a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila, 65 kilometers (40 mi) northwest of Guadalajara, and in the highlands (Los Altos) of the western Mexican state of Jalisco. The red volcanic soil in the surrounding region is particularly well suited to the growing of the blue agave, and more than 300 million of the plants are harvested there each year. Agave tequila grows differently depending on the region. Blue agaves grown in the highlands region are larger in size and sweeter in aroma and taste. Agaves harvested in the lowlands, on the other hand, have a more herbaceous fragrance and flavor. Mexican laws state that tequila can be produced only in the state of Jalisco and limited regions in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas

All Tequila is Mezcal, but not all Mezcal is Tequila. Tequila Marketing Mantra. Mezcal is the generic name for all spirits distilled from the agave, as well as the name of a regional beverage, similar to tequila, but made mostly in the state Oaxaca.
